Avocado Crostini
serves 2-4
This avocado crostini is a simple, delicious way to use up leftover avocado and good quality whole grain bread. If the avocado is overripe, you might add a little Greek yogurt to give the spread some extra richness.
4 thick slices good-quality bread
1 clove garlic, cut in half
1 tablespoon olive oil
2 ripe avocados, cubed
1 tablespoon red wine vinegar
1/2 teaspoon kosher salt
1/2 teaspoon red pepper flakes

1. Toast the bread until crusty but still a little soft in the center. Rub the garlic clove on one side of the slices. Drizzle them with a little olive oil.
2. Cut the avocados in half and discard the seed. Scoop out the flesh and slice the halves into small cubes. In a bowl, gently mix the avocado cubes with the vinegar, salt and red pepper flakes. Spread some of the avocado mixture onto each piece of bread. Drizzle with more olive oil and season with salt and pepper to taste.
