Simple Quinoa
serves 2-4
Quinoa is a great alternative to rice, if you're looking for something simple and different. This recipe could be easily varied with herbs and spices.
1 cup quinoa, rinsed and drained
1 1/2 cup water
1/4 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper

total: 30 minutes

In a bowl or fine strainer, rinse the quinoa with cold water a until the water runs clear. In a medium saucepan, combine all the ingredients. Bring to a boil, then cover and reduce to a simmer. Simmer until all the water has been absorbed and the quinoa has opened to reveal its thin curly germ, 10-15 minutes. Remove the pot from the heat, keeping it covered, and let it rest 5-10 minutes. Fluff the quinoa with a fork before serving.
